Yoghurt, Lime and Pistachio Sponge




Since my highest demand is for sponge layer cakes I thought I would experiment on some new sponges! This one is a no-butter Yoghurt, Lime and Pistachio Sponge, it is so moist but keeps its shape well and would layer perfectly.

On the other hand just simple as in the photo this would be a lovely cake to bring to a dinner party, everyone loves a 'home-made cake' -it can be our secret!-

This would come to £15 for 8" sponge to feed 10 or it would be at an extra £3 on top of the original layer cake.

Celebration Time



This was a cake to celebrate many things: My dads new job and Nala coming home after 5 months away and most importantly, the first day we've been able to have lunch outside!
I'm pretty sure this was a Hummingbird Bakery recipe but it was so long ago that I found it I honestly can't remember. 
I've iced it with cream cheese frosting, the roses on the sides are a style I saw on a fellow bloggers' site which I am addicted to. I've shared her link down below. Its a technique that's really quite speedy and you only need a star nozzle and piping bag to master it!

Wedding Season



I've been a bit busy lately so I decided that after such a long wait it needed to be worth it. This is my first Wedding cake. Coated in rolled icing, piped with royal icing pearls and detail. Topped off with a W emblem. Hope you like it as much as I enjoyed decorating it.

Love Lemon Sponge



This is a 3 layer vanilla sponge. The first is lemon curd and the second is lemon buttercream. I think that two layers of lemon curd would have been a little sickly. Then I coated it in rolled icing and added a huge rolled icing ribbon that I had shaped and allowed time to set before piping onto it in red. 

English Rose



I wanted to do something really fiddly so I made a bunch of rolled icing roses and I finally got to use an old French lace ribbon that I bought quite a while back but I didn't have a cake simple and delicate enough to suit it.

Cupcake Galore



I tried this cake a couple of years ago for a friends birthday and failed horribly because of the rolled royal icing so this morning I woke up thinking: Today I shall conquer the giant cupcake. And I did! Just as easy as a normal victoria sponge, it just looks much more festive. Perfect for a kids party.

Darling Gardening



I swear by the Little Venice Cake Company decoration-wise, but only today did I first attempt one of Mich Turners' cake recipes, her Chocolate Truffle Cake. Since her cakes are for celebrations so therefore layered, they seem to be quite sturdy. Sturdy but tasty. I've added vanilla buttercream frosting as well, it is surrounded by rolled and royal icing to resemble a flower filled plant-pot. Daisies of course.

The White Collection



I've been much too eager to ice my christmas cakes so I decided to cut one of the cakes into four for little individual cakes and pass them off as early christmas presents! The icing and decorating is my absolute favourite part so I really enjoyed finishing these off.
I'd love to know which one you prefer out of the four, personally my favourite is the ruffled one.

Comforting Banana Bread



After having my brother over for the weekend we didn't want him to go home empty handed so, using up the old bananas, I made a banana bread. We found the recipe in Grazia "Hannahs' banana bread" but before popping it in the oven I sprinkled over some chocolate and slices of banana.

Eccles Cakes



Last night on telly Jamie Oliver was touring Yorkshire/Lancashire and made his own version of Eccles Cakes. I couldn't find his recipe on line and everyone had different views on what they should contain so following my parents memories, I guessed. A few currants, spices, sugar and butter and they were ready. I used ready made puff pastry but I'm sure sweet pastry would've done the job. I rubbed brown sugar on top before cooking so they have a gorgeous golden glaze.

Almond chocolate cake



This was a last minute recipe to use up some of the chocolate I had melted for the Truffles and a random selection of nuts in the snack drawer! I've used Peanuts and Almonds as that's what we had but any nuts will do.
The icing and filling is a chocolate ganache with some added glucose to make it extra shiny.
